A traditional green tea produced in China and Japan, matcha is made by picking the early spring green tea leaves that have been shaded from the sun, and then grinding them to a powder. This retains the amazing health benefits that green tea is said to have, and makes for an earthy brew. Simply mix with hot water, and whisk, to enjoy a matcha tea, or experiment with adding milk and jaggery for a 'matcha latte.'
We also love using matcha in cooking! Add it to cupcakes and cakes for a green tea taste (and look!), or mix it with salt for a savoury accompaniment to Japanese food.
Note: matcha is quite high in caffeine so only use small amounts and follow recipes when cooking with it!
