When they say to add a little bit of spice and all things nice - Ceylon cinnamon is what they are talking about!
There are two types of cinnamon - Ceylon and Cassis. Ceylon is the higher grade, and of course the ONLY thing we will use in our chai blends! Ceylon cinnamon is full of character and sweet flavours. In my mums' cooking, cinnamon is the secret ingredient in her curries and biryani...shh!
In Ayurveda (Indian natural medicine), cinnamon is traditionally used to improve the digestion, cleanse the body and strengthen circulation. For the Ayurvedic nerds amongst us, cinnamon is also known to help pacify Kapha and balance Vata.
Sprinkle this cinnamon on top of your milky chai or turmeric latte, cappuccinos or smoothies. Cinnamon is a star ingredient in so many cakes, and I basically use it to bring a sweet treat to anything that I bake!
