When they say to add a little bit of spice and all things nice - ceylon cinnamon is what they are talking about!
There are two types of cinnamon - ceylon and cassis. Ceylon is the higher grade, and of course the ONLY thing we will use in our chai blends! My mum puts a few cinnamon sticks in her curries and biryani to for its sweetly pungent flavour. In Ayurveda (Indian natural medicine), cinnamon is traditionally used to improve the digestion, cleanse the body and strengthen circulation. Ceylon cinnamon (true cinnamon) is full of character and sweet flavours. For the Ayurvedic nerds, cinnamon is known to help pacify Kapha and balance Vata.
Use this cinnamon to sprinkle on top of your milky chai or turmeric latte, cappuccinos, smoothies, cakes and bakes and any sweet treat for that little something extra!
