Summer Hill Honey is an all natural, raw honey, sourced & extracted from hives in the Summer Hill, Sydney area. This “floral honey” is a gift from the bees that gather pollen and nectar from the local trees and plants as they are coming in to flower. That is why you’ll be able to pick up very floral notes when you taste this sweet treat.
We love this honey so much that it is one of the star ingredients in our popular Sticky Chai. It is amazing drizzled on sourdough toast or as an alternative sweetener in your morning Chai or English Breakfast Tea.
As this honey has not been heat treated, all the nutritional and antibacterial benefits of pure honey remain.
As a fun side note: raw honey is reported to be the only food that will never deteriorate. Pots of honey (believed to be over 3,000 years old!) were found in Ancient Egyptian pyramids! And it was still perfectly edible! Check out this fascinating article from the National Geographic here.
Note: The honey colour may differ over the seasons, depending on what the bees have been enjoying! In cooler climates your honey may granulise or ‘candy.’ Sometimes this is also called crystallisation. This is a natural process and does not affect the taste or quality of the honey. You can get back to that smooth honey consistency by heating the honey slowly in a bowl of warm water (in the jar) and stirring it. However, this is not necessary. Crystallising is just a natural part of honey nature!
